I hope everyone had a great Thanksgiving! We enjoyed eating leftovers yesterday, but today I thought I’d make something different. These Thanksgiving Leftovers Turnovers are great if you’re already tired of eating leftovers. If you have a ton of leftovers still, you could make a big batch of these, freeze them, and then bake them whenever you feel like.
This is sort of a “no recipe” recipe. You can be creative and put whatever combination of leftovers you have left. I put leftover turkey, gravy, and cornbread and sausage stuffing in mine. They taste like little Thanksgiving pies… so good!
Thanksgiving Leftovers Turnovers
1 sheet frozen puff pastry, thawed
Leftovers, chopped small if needed (turkey, stuffing, and gravy work well)
1 egg beaten with 1 tablespoon of water
Preheat oven to 400 degrees and line a baking sheet with parchment paper. On a clean surface (use flour if needed) use a rolling pin to roll out the puff pastry sheet to a 10×10-inch square. Then use a sharp knife to cut the square into 9 smaller squares. Place leftovers on one side of each square (only use about a tablespoon of filling for each turnover) and then brush the edges with egg wash. Fold over the puff pastry squares to create triangles and use a fork to crimp the touching edges.
Place the turnovers on the prepared baking sheet, brush with egg wash, and then place in the fridge to set for 20 minutes. Once chilled, bake for about 20 minutes, until the turnovers are nice and golden brown. Cool for a few minutes before serving.
Makes 9 turnovers.
